Like most regions in Italy, Tuscany produces particular types of cheeses that are unique to its region. For example, the cheeses of Tuscany, can be vastly different in texture and taste from the cheeses farther south, such as Sicily. There are several predominant types of Tuscany cheeses, including ricotta, goat, raviggiolo, caciotta, and pecorino. There are variations of these cheeses, but these are the primary ones. It may be surprising to many travelers that some of these cheeses are a product of sheep milk, as compared to the cattle milk that most people think of when it comes to cheese.
